The Pylontechs do seem to have a very good reputation and they have been manufacturing for some time so have some history. Their is an Australian web site that has results of long term testing of various batteries and they come out pretty well top.

🤣 at your wording.
The problem is those voltages and currents aren't constant. The battery might lower the charge current and raise the voltage at the end of charge in order to do balancing. Or it might lower discharge current due to temperature derating etc.

The BMS has protection features but that is it protection and control is via CAN.
With Lead acid batteries do you leave them to float at Bulk or Absorption voltages? No you turn the voltage down to float voltages. The BMS is designed to instruct the inverter what to do for the best health of the battery, at the best time and to keep things safe.
For such an expensive piece of kit I would want to keep the warranty. If the manufacturer categorically states that they approve a particular setup then your possibly OK, but I'd not want to risk it myself.

Mine will go in steps say from 15A to 7A controlled by the battery BMS sending those values to the inverter..

It's likely under warranty (?) and if by chance you get the wrong info or thing to try on a forum you might void that warrant perhaps?

Don't alter what they have done or supplied and always give them chance to rectify the problem first. But, I've often come across companies that that will try to fob you off even when you have the evidence that what they have done is wrong.
