Solar for co2 laser cutter

Good day 

My first post here 

I have had 12v systems for 8 years now, running a few appliances and computers fairly successfully 

However, the time has come to build something for my co3 laser cutter, i have been to a few local companies, but not a single one has really listened to my need and all quoted on a generic household setup with lots of battery and very little panels 

I would like to use mostly pv as we usually work office hours and the weather is fairly good. On the bad weather days eskom will have to do, if available 

My loads are:

Laser 770w

Chiller 450w

Extractor fan 750w currently,  but will buy a new one at 150w odd 

Computers 200w max (on a separate 12v system with solar)

Only the fan has a big start up current,(16A on 230V)therefore it will be replaced, the chiller probably also has a spike, but my clamp tester does not register it 

I have thus far purchased a few good used items 

48/3000 multiplus 1

250/100 mppt 

My question is, how big battery and how many panels should i install?

Obviously keeping budget in mind 

Thinking was to overpanel and to "under" battery , hence the big mppt allowing me to almost work directly off the pv.

Was thinking 2500 to 3000w of panels with a 48/50Ah battery for now , with the ability to add batteries if needed later

I can see you have done some good homework already, make sense to me. The 2.5kw battery should fill the valleys of the PV adequately, given that a 50ah battery also allow a short duration above 50a, if battery is 1C. Minimum 50A discharge capability from battery is  required. 

3000kw PV is good. 

In absolutely worst case, where there is no mains and weak pv power  for extended period, it will run out breath due to smallish battery. But as you say, the initial system can scale towards adding batteries.
