Hi,

I've installed a Mecer 5 kVA 48V inverter, Pylontech US3000 48v 3.5 kWh Lithium battery, and an Raspberry Pi ICC.

This has worked great and powers the house backup circuits nicely through load shedding - lights, TV, DSTV, WiFi, HiFi, etc.

I'm thinking of installing some PV panels and just can't seem to get a clear idea of how to configure these. 

Do I go for multiple strings of 2x 72 cell panels in series, or do I go for multiple strings of 3x 60 cell panels in series?

Are there other combinations that would work better?

( Inverter - Rated solar power = 3000W, max PV open circuit voltage is 145 V DC, PV array MPPT voltage range 60-115 V DC ).

The latter is easier and cheaper to wire. But you may be constrained by what you can buy. I don't believe that there is a performance difference.
