I have a 8kva Deye inverter. And I have 15 x 550watt  PV panels. How many string is best. 7 on one and 8 on the other or three strings of 5 per string.

With the 550w panel, u will have to do 7 and 8. You can’t do 3 x 5 as the current on the panel is too high to be paralleled
