I've read that typical and acceptable DoD for a Lithium battery is around 80%. I'm considering changing my configuration to a DoD of around 65%-70% of my 5kWh battery to optimize the time I spend drawing from the grid.

Any gotchas I need to be aware of?

All depends on what battery you have.  Not all are equally good

It's a Shoto SDA10-48100 (5.12kWh) 100Ah/48V.

Specs say 90% DoD =4,6kw. If you want to get that you need to put in 5,12kw.
