2.5kw+3kva+1300w panels vs 5kva+5ka with no panels
I will personally go for option 1 purely based on the panels. I run a similar setup but with 2 essener 25.6 lithiums and 4 x 350w panels. The panels assists the batteries during the day. I'm about to add 2 additional panels as i see the benefits.

It's important to size your inverter correctly with future expansion in mind. If you purchase a lower spec inverter you only limit your options later down the line. Lookout for maximum pv input, voc and Isc when considering purchasing any inverter.

I checked out the website and understand why some were referring to the colours. I would advise to give the end users an option. When initially visiting the site rather have lighter colours present and have a toggle for the users to switch to dark mode for those who prefers darker colours. A lighter mode is usually more appealing to most users unless they have visual problems. The widget is a great idea as well.

Esener lithium batteries
I have been using 2 x 24v Esener batteries and they work perfectly.

I'm running a 3Kv Mecer inverter, with 2 100v solar panels.
Its most likely 100watt panels. If you take panel efficiency into account roughly between 15% and 20% and how they are connected will determine their ouput. Posting your panel specs will help alot or post a picture of your panel sticker.

The key is using the system only for essential loads. Remember its a long term investment and ideally you would want it to service your needs for as long as possible. Battery DOD is crucial and ensuring your panels are kept clean regularly.

The app does not display realtime info. Your data logger sends the info the the server every 5 minutes. Sometimes there is a lag in the info being updated.

Added grounding lugs on the rails and separate rod to the ground(10mm cable used). Installed a surge arrester on the dc side(solar combiner box) for the incoming strings as well also running to the ground rod.

Mixing Panel Sizes
I'm currently in the same situation. I've already procured my panels with different specs to add to my system as i couldnt find the same spec panels. I have my reservations with optimisers but will wait to hear others experiences.

I did my first install by myself based on lots of research and youtube videos. I didn't cut any corners and as a result It passed coc. I then did the course and passed with flying colours as i had the practical experience. It is relatively easy once you understand everything.

I am not familiar with that inverter. Do you not have an SNU option as under normal circumstances that will be the setting you looking for.

I would agree. Series parallel is your best option to go with. As you are already maxing out your allowed solar voltage you run the risk of damaging your contoller.
