Over paneling is done often. The inverter will only take as much PV as it can. Ie a 8kw inverter won't use 12kw of PV. But in poor weather you will benefit. Very important though. Do not exceed the mppt max Voc

Not sure why you are being told here that you can't have East and west on 1 mppt. You certainly can but you must use the same amount of panels in each orientation and the panel specs must be the same. You then parallel each orientation in the inverter. The inverter has 2 string inputs on each mppt so there is no need to combine them in a separate box. You will however need a PV DB for breakers/fuses and surge protection.

Yes. And in the parallel case I think the higher voltage on one string could force the bypass diodes on the shaded string to close.

I'm thinking that possibly the higher voltage string will raise the voltage on the shaded string. Not the other way round.

My 8S string still produces over 350V with half the panels in shade. Just low current

I mean lower voltage on 1 string and full voltage on the other. Basically 3 panels on the east string get half shaded after noon. But shaded panels still produce voltage and not current so I'm not sure.

I'm doing a 6S2P east/west split. I'm thinking about voltage here not current. By midday the east string will be half shaded. What happens to the voltage of the west string? If the east string is a lower voltage will it pull down the west string voltage?

What about fitting a standard geyser and using a geyser wise? My solar geyser is 15 years old. In winter the cold ambient air really cools it down. I'm considering a new in roof geyser and a geyser wise with a few panels.

Personally I would want to compress just a tiny bit so clips don't seem like a good idea for that.

Correct. There are many on the market. My favorite are the victron mppt's. It has no real affect on communication. Battery will report SOC to the inverter. Standalone mppt is basically just like another battery in parallel. You can use a mppt charge controller connected to batteries if you want more panels.
