AC & DC cables in trunking
Some use sprague to separate the AC from DC within one trunking. Easy to cut length wise and push the cables in. Then cable tie. Wonder if it being cut affects anything.

Pv values incorrect
Is that a single inverter connected to solar assistant ? We had a similar issue , but that was because solar assistant doesn't pick up mpp2 values unless directly connected to each inverter. Having a usb cable to each sorted that out.

Interesting. Even voip phones etc generally all (can) run on PoE, and they are supplied with standard cat5e cabling. So guess we supposed to be using properly earthed shielded lan cabling or running conduits to every phone, . Hehe

No regulations. Only best practices. Lan cables won't be overheating etc, even if you crimp it wrong, so no worries. Minimal current, this is data. I would use the solid copper cat 5e /6 from Scoop. Not copper coated aluminium (cca). Especially if using PoE and long runs. Just try to avoid running them next to power cables, to avoid any interference.

Works well, just expect a few seconds delay, so don't exceed your inverter limits then hope this device will solve the problem. In your case it should work just fine . Geewiz sells the same kit just cheaper

Sunsynk / Deye 3 phase setup
You can do so, but the 16kw are single phase machines, so on one phase you'll end up having 32kw inverter , the other two will have 16kw. Just make sure your municipal supply can provide that much power

SunSynk Aux Load (Smart load) on a three phase install.
This is a single phase machine on one phase, with the other 2 phases completely separate. So you won't be able to supply the non essentials on the other phases with extra pv. You could wire them to the Aux on this phase, or have them on the non essentials of this phase which the inverter is on. Your meter is digital and cannot spin backwards like some guys do on the old mechanical meters (although as mentioned above that's not good practice)

You can use any raspberry pi locally , then buy just the solar assistant software and install on the pi. Check solar assistant website for further details on how to do so
